Curry Laksa is a spicy noodle soup consists of thick curry laksa broth and noodles. The thick curry laksa broth is made with many spices, herbs and coconut milk. The common type of noodle for the curry laksa is the white thick rice noodle. For the topping, the common ones are fish cakes, fried tofu puffs, shredded chicken, shrimp, hard-boiled eggs, flaked laksa leaves and bean sprouts.

Ingredients
  

  • A packet of instant Curry Laksa paste, 200g tbsp (14.1 g)
  • 900 ml Water
  • 200 ml Coconut milk 202.9g
  • 300 g Chicken cut to small pieces
  • 1000 g White rice noodles, yellow noodles (Shanghai noodles), vermicelli or instant noodles.
  • 400 g Prawns/shrimps without shell
  • 200 g Fish cake sliced
  • 100 g Fried tofu puffs
  • 400 g bean sprouts
  • 2 hard-boiled eggs
  • 10 g flaked laksa/basil leaves

Instructions
 

  • Fry Instant Curry Laksa pause until fragrant.
  • Add in water, mix well and bring to boil.
  • Add in chicken pieces, prawns and fried tofu puffs, simmer until cooked, about 10 minutes
  • Add in coconut milk and laksa leaves, bring to boil.
  • Blanch noodles, & bean sprouts
  • Serve with fish cakes and halved hard boiled egg in a soup bowl.
  • Pouring hot Curry Laksa soup into the soup bowl, ready to serve.
