Penang Assam Laksa is a traditional Malaysian noodle soup that consists of rice noodles and thick spicy, sour, sweet flavor fish-based soup. Shredded fish, sliced onion, cucumber, pineapple, mint leaves and lettuce are the common toppings.
Penang Assam laksa has an exceptionally complex flavor of spicy, sour and sweet. The best part of the dish is the fish-based soup that is cooked for a long time with many herbs and spices. One of the special ingredients in this dish is the bunga kantan (torch ginger) that has a nice aroma.

Ingredients
  

  • 1 packet Penang Assam Laksa paste
  • 1300 ml Water
  • 800 g Rice noodles
  • 100 g Red onion
  • 200 g Cucumber
  • 200 g pineapple slices
  • 100 g lettuce
  • 30 g mint leaves
  • 300 g shredded fish
  • shrimp paste

Instructions
 

  • Heat up 1300 ml water in a pot
  • Add in the paste, and stir to prevent the paste from sticking at the bottom of pot
  • Ready to use once boiled
  • Prepare laksa noodles and add in all necessary vegetables
  • Add in soup and ready to serve
